It's as easy as A-B-C


"ABC 123" was one of my favorite songs from my childhood because I cut the 45 record out the back of the Alphabits box and played it on my turntable.

This ABC salad is also one of my favorites because it's really easy, fast, and incredibly nutrient-dense. Beets are an excellent source of folic acid and are also a good source of manganese, potassium, and fiber. Your liver LOVES beets and even if you think you don't like beets, give this salad a try. It's sweet and fresh. Don't be surprised if your stool is a little pink.

INGREDIENTS

1 beet

½ apple

1 carrot

Squeeze of lemon (to taste)

1 Tbsp flax or avocado oil

Wash all. Peel beet. Shred in blender/magic bullet.

Squeeze lemon to taste + add oil.

Serves 2.
